The extra "beef" that offensive linemen have is to hold up against a defensive lineman converting speed to power.

Just because a person outweighs somebody by 10-20 lbs doesn't automatically equal greater strength. Keep in mind on any running play it's generally designed to only go through one gap. They don't have to stop every blocker, they just have to stop that one gap. On goalline plays it's generally the A or B.
